Sun-dried tomatoes are an excellent source of valuable nutrients, characterized by an intense flavor and concentrated nutritional value.
Main health benefits
• Higher lycopene concentration: Once water is removed, the powerful antioxidant lycopene becomes more concentrated, helping to reduce oxidative stress and protect cells.
• Rich in fiber and minerals: They retain more fiber, calcium, and phosphorus, which are important for digestion and the skeletal system.
• Vitamins and trace elements: Sun-dried tomatoes provide the body with iron, potassium, and vitamins (such as vitamin K, which promotes blood clotting).
• Better absorption: When sun-dried tomatoes are seasoned or stored in olive oil, fat-soluble substances are absorbed more efficiently.
Sun-dried tomatoes (especially soaked in oil) are an extremely versatile ingredient that gives dishes an intense, sweetish, and savory flavor (known as umami).
Here are their most popular and delicious uses, categorized by dish type:

• Bruschetta and sandwiches: Place them on toasted baguette along with cream cheese, basil, and a drizzle of balsamic vinegar glaze.
• Cheese and meat platters: Serve whole tomatoes alongside hard cheeses, olives, and prosciutto.
🍝 Hot dishes
• Pasta: Heat chopped tomatoes in a pan with garlic, olive oil (you can use the same from the jar), chicken or shrimp, and mix with pasta.
